This is one of our most favorite breakfast ideas when you need something rather quick, not messy or have a lot of people to feed. It is one of those great things that you can prepare well in advance. I love having one of these made and in the freezer ready to thaw anytime I have guests over.

Start by crumbling and cooking 1 lb of hot breakfast sausage in a skillet. Owen’s Hot is our favorite for the most flavor and a little kick. My kid’s who eat extremely bland still like it this way.

Preheat the oven to 425 degrees.

While the meat is cooking, spray cooking spray into a 11×13 casserole dish. Unroll 1 can of crescent rolls into the casserole dish. Make sure to press together the seams. I like to leave a little bit of height along the edges.

Once the meat has finished cooking, drain the skillet. Or you can place all the meat on a plate covered in paper towels to absorb some of the grease. Spread out the sausage through the whole dish.

In a separate dish (we just use a plastic cup), crack open 5 eggs and scramble. Pour the eggs all over the dish making sure to get each area covered. I typically go around the outside edges first and then finish up in the middle. Sprinkle some salt and pepper on top.

Now here is the best tip! Use a spatula and press down everywhere. This will help the egg soak through and will help it to cook evenly. Otherwise you will get to high spots with some eggs and those areas will burn before your bottom is fully cooked.

Now just bake the dish for 15-20 minutes. Super easy and delicious! I like to serve it with a bit of fresh salsa on top. Yum!

Ingredients

  • 1 lb hot breakfast sausage

  • 1 can of crescent rolls

  • pinch of salt

  • pinch of pepper

  • 5 large eggs

Directions

  • Crumble and cook the hot breakfast sausage in a skillet. Drain once finished cooking
  • Preheat oven to 425 degrees.
  • Roll 1 can of crescent rolls into greased casserole dish. Make sure to press down the seems. Spread the cooked breakfast sausage on top of the crescent rolls.
  • Scramble 5 eggs in separate dish. Pour eggs over entire dish making sure to cover everything. Add salt and pepper. Press down with a spatula to help cook evenly.
  • Bake for 15-20 minutes. Serve and enjoy!
