Lasagna Soup – My kid’s favorite!

Whenever I ask my kids what they would like for dinner it is always Lasagna Soup. It doesn’t matter if it is in the summer, winter, birthday dinner, or a random Tuesday. I get this requested by them the absolute most. It helps that it is so simple!

in a large pot, I start with 1lb of hot italian sausage and 1lb of hamburger meat. Crumble it all up and cook on medium heat.

I’m sure that everyone by now has this fantastic little contraption. But if by chance you don’t, then I highly recommend one. You can find them pretty easily on Amazon and in most stores. It helps chop up the meat so much better than using a spoon or other cooking utensil.

While the meat is cooking, add your seasonings to the meat. One of my favorite seasonings to put on any hamburger meat is Nature’s Seasonings. It is just a great blend to start with and smells so great! Next add minced garlic (4 cloves), italian seasoning (2 tbsp) and crushed red pepper flakes (1 tsp). My kids usually eat things rather bland but even they can’t taste the crushed red other than to give it flavor.

While the meat is finishing cooking, I prep the sauce portion. My kids (and let’s be honest, my husband too) is not a fan of any tomato products that are chunky. So over here, we have to blend things to appease them. I will put into my blender, 2 cans of Fire-roasted Garlic diced tomatoes and 1 can of tomato paste (6 oz). The tomato paste is what helps the sauce stick to the meat and noodles.

Drain the meat mixture and put back on the stove. Pour in the tomato mixture and mix together. I like to make sure to make sure these are all mixed together before adding in the broth.

Add in the salt (1tsp), black pepper (1/2 tsp) and chicken broth. Stir and increase heat to high.

While you are waiting on the soup to simmer, go ahead and break apart your lasagna noodles. This makes it much easier to eat the soup without having to cut the noodles while in the bowl.

Reduce heat to medium heat and add the pasta. Stir occasionally and continue to cook until the noodles are soft which will be around 8-10 minutes. Once the noodles have finished cooking, add in the parmesan cheese and mozzarella cheese. You are ready to serve!

Ingredients

  • 1 lb hot italian sausage

  • 1 lb ground beef

  • 4 cloves of garlic, minced

  • 2 tbsp Italian seasoning

  • 2 tsp nature’s seasoning

  • 1 tsp crushed red pepper flakes

  • 6 oz tomato paste

  • (2) 14.5 oz cans fire roasted garlic diced tomatoes

  • 8 cups chicken broth

  • 1 tsp salt

  • 1/2 tsp black pepper

  • 8 oz lasagna noodles

  • 1/2 cup parmesan cheese

  • 1/2 cup mozzarella cheese

Directions

  • In a large pot, cook the hot italian sausage and ground beef on medium-high heat. Crumble the meat and mix together. Add in the nature’s seasoning, garlic, italian seasoning, and crushed red pepper. Drain.
  • Blend the tomato paste and fire roasted diced tomatoes. Add the blended tomatoes to the meat mixture and mix. Add the salt, pepper and chicken broth. Increase the heat to high and stir. Break apart the noodles into smaller portions. When the soup begins to simmer, add in the noodles and reduce to medium high heat.
  • Once the noodles have finished cooking in 8-10 minutes, add in the parmesan and mozzarella cheese. You are ready to serve!

Notes

  • My husband usually wants a bit more meat with his soup, so I typically either grill or bake some hot italian sausage links to go along with his dinner.
